Tortilla Espanola is the Spanish version of an omelet. You'll find it everywhere, even in Spanish 7/11s on the highway. At its most traditional it's nothing more than potatoes, onions, eggs, a little olive oil, and salt, though you could add flavorings like cheese, zucchini, or even codfish of you're so inclined. The key is cooking the omelet evenly once everything is in the pan. Make sure you let it rest before you cut it. For breaking the fast prepare the day before and leave out. If there's any left after the break fast, store in the refrigerator.
