Something I love is tortilla espanola--you know, a Spanish omelette? It's just sort of a pancake of potatos and eggs and i think onions. you cook it all on the stove--super simple. it's usually served room temp but could also be eaten chilled.
In Spain they dip it in a thicker version of gazpacho, the name of which I can't recall now. Stay tuned to Pickled and I'll blog this out for y'all. It's SO good. And not terribly bad for you.
