Yes, it's unpleasant to cut up poultry without out a sharp knife. So get a sharp knife already (or better yet a knife sharpener - the sharp knife that you buy will be a dull knife pretty soon if you don't keep sharpening it). With a sharp knife it's not that big a deal - the people who work in poultry plants do hundreds a day, one every few seconds, and would laugh at how proud you are about cutting up two whole birds as if this were some monumental accomplishment.
